The sole difference between the Extra brut and this Extra Brut Mosaïque is its minimalist dosage and allows the blend of roughly 40% Chardonnay, 35% Pinot Noir, and 25% Meunier, shine through. Of the varietal blend, there is about 30% reserve wine incorporated. The bottle then saw 5 years of maturation in the cellar before being offered here.
The color is brilliant, crystalline pale yellow with golden nuance. The nose offers up suggestions of lily entwined with fresh citrus notes of lemon rind. The palate shows creaminess and upright character on the front palate. The remaining taste is supported by lemony acidity tinged with grapefruit. The finish is lifted by citrus continuing the lovely acidity and a subtle, savory saline sensation.
